BOOOOOOOO! Did I scare you, I’m sorry 👻. It’s this time of year again, my favourite holiday. This recipe was inspired by this pin, with a few change-ups in ingredients and painful US to UK conversions. These were a super fun Halloween snack and activity to get you in the spooky mood, that didn’t take a lot of skill (which is great for me 🤭). I found the eyeball decorations a few weeks ago with no idea what I was going to do with them, little did I know I would be making cyclops cookies that are kinda scary but kinda cute.
Ingredients
This recipe made 12 cookies
- 200g plain flour
- 80g cocoa powder
- 1 teaspoon of baking powder
- A pinch of salt
- 200g of brown sugar
- 120g of unsalted butter
- 2 eggs
- 100g of golden syrup
- 1 teaspoon of vanilla essence
- 150g of milk chocolate
- I used 3 tubes of smarties (but any non branded hard shell chocolates will do)
- Baking eyeball decorations

What is a UK alternative to Karo Syrup (Corn syrup)?
I’d never heard of this before making these but apparently adding this corn syrup to your cookies makes them extra soft and helps retain the moisture. Obviously, I didn’t have Karo syrup and I’ve never seen it in the supermarket but golden syrup is the closest substitute and you’re more than likely to already have some in your house.
Instructions
- First, heat the oven to 180c

Combine all the dry ingredients
- Whisk up your wet ingredients and sugar, making sure your butter is at room temperature

- Mixy Mix Mix: Add the two bowls together, this step takes a lot of muscle!

When all mixed, stir in your chocolate and smarties
- Drop a tablespoon worth of the mixture onto a tray lined with baking paper, press your hand down on them lightly
- Bake for 15mins, they’ll still be slightly soft so you can push your little eyes into them. Let them cool down on a baking rack for a few minutes

I’m in love with how these came out! Especially the one that looks like this scared dog meme

I scared
Rating
We don’t give this rating often here on Bake-abel but this one is 5/5 barnabies. So yummy, so soft, so chewy, so chocolaty. Basically the best cookie I’ve ever made.
