It’s that time of year again and it wouldn’t be me if I didn’t force the whole family to do some fun spooky activities. This weekend was these cute bat cupcakes with chocolate orange flavouring (as voted on as the most popular flavour in our house).
180 c fan oven Cooking: 15 mins Prep: 20 mins Decorating: 10 mins (this recipe makes 12 cupcakes)

- The first step is to beat together the room temp butter (110g) with the caster sugar till nice and fluffy.
- To this you add the eggs one at a time and your orange flavouring.
- Once this is combined, sieve in the flour and fold together.
- This mixture can then bake for 15 mins.

- Whilst they’re in the oven you can get to making your fondant eyes for you bat friends.
- Use the white fondant to make the whites of the eyes and add black food colouring to make the pupils. Roll the fondant between your hands to create ball shapes.
- The Oreos can be cut in half to make the bat wings.
- To make the buttercream, whisk your left over butter, the cocoa powder and the icing sugar.
- Mix in the orange essence if you want more orange kick.
- The buttercream needs to have a soft whipped consistency, add a tiny drop of milk if you need to.
Decorating

- Pipe a swirl onto each cupcake once cooled.
- Add the bat wings by turning the Oreo half on its side.
- You can then add the fondant eyes you made and the glitter of you choosing.
And voila! You have your own bats ready to sparkle in light of the moon.
