“AnnAnn Noodles” – Spicy Noodles

Based on DanDan noodles, this spicy noodle dish with sweet and salty flavours has quickly become a comfort food for me. I ended up substituting a few ingredients, adding pak choi, and making this a vegetarian-friendly easy meal for when I don’t feel like cooking anything fancy.

What You Will Need

  • Minced Garlic
  • Chilli Flakes
  • Pepper
  • Sesame Seeds
  • Oil
  • Soy Sauce
  • Vinegar
  • Noodles (I used rice noodles)
  • Pak Choi
  • Cumin
  • Tomato Passata Sauce
  • Salt
  • Peanut Butter
  • Optional: Chia Seeds, Lemon Juice

Instructions

  1. Firstly, we need to make our sauce. I added the spices, vinegar, soy sauce, salt, pepper, sesame/ chia seeds, and peanut butter to the pan with a splash of oil on a low heat.

2. In a stainless steel pan, we first need to do the “water trick”. I learned this from Brownble on YouTube, basically, once the pan is hot enough you will be able to add water and it will glide across the pan resembling mercury. This aids the pak choi from sticking to the pan.

Your pan should not look like this.

3. Add your oil to the pan and place your pak choi stems to brown slightly, turn them after a few minutes and add some lemon juice. They are done when tender.

4. Add your desired noodles to a pan of water with a sprinkle of salt and cook for the recommended time, rice noodles take 2- 3 minutes.

5. Add your sauce to the cooked noodles and mix together, you can add your pak choi on top (place artfully on top and pretend you are on a cooking show if desired).

Pak Choi/ Bok Choy

As a cruciferous vegetable pak choi is rich in antioxidants, full of fibre, nutrients and minerals. These health benefits include: the prevention of cancer, fighting inflammation in the body, lowering the risk of heart disease, improving bone, skin, eye, immune, and skin health.

So overall, a pretty SUPER food!

I’d give this meal 5 out of 5 barnabies. It’s quick but nutritious and tasty! If you like spicy then this one is worth a go.
